How to pour a 440ml nitro stout.

The best method depends on the can and any surge device you use, but the essentials stay the same: cold stout, clean glassware and a confident pour.

1. Chill the can properly

Let the stout cool evenly in the fridge. A properly chilled can helps the dispense behave consistently and gives the head time to form without the drink warming too quickly.

2. Start with a completely clean glass

Grease, detergent residue and lint can interfere with the head and leave bubbles clinging to the inside. Rinse thoroughly and allow the glass to drain without polishing the interior with a cloth.

3. Follow the can or device instructions

Nitro cans and surge devices do not all work in exactly the same way. Open, position and activate yours as directed by its manufacturer. If the can calls for a hard or fully inverted pour, commit to it rather than trickling the stout down the side.

4. Let the surge settle

Place the glass down and watch the cascade settle into a dark body with a pale, compact head. Avoid topping up or moving the glass while the head is still forming.

5. Serve it in proportion

A purpose-sized glass lets the 440ml can finish close to the rim while preserving space for the head. That is the difference between simply transferring the drink and presenting a complete-looking stout.
